Go Green

You’re composting. You sort your trash daily trying to recycle anything you can. You’ve even tried taking public transportation to work. You’ve gone green! Great work but we are talking about a different type of green.

Trying to get your tikes to get their daily dose of greens can be rough. If coaxing a few more carrots and peas is an Everest type feat, trust us, we understand.  We have compiled a few of our favorite veggies heavy recipes that even your toughest tiny critic won’t turn away. Our philosophy: sneak them in with a smile and they won’t even know those healthy things are there!

Macaroni and Cheese With Cauliflower


Ingredients
12 ounces multigrain elbow macaroni
1 head cauliflower, roughly chopped
4 slices multigrain bread, torn
1/2 cup fresh flat-leaf parsley, chopped
3 tablespoons olive oil
kosher salt and black pepper
1 onion, finely chopped
1 1/2 cups grated extra-sharp Cheddar (6 ounces)
1 1/2 cups reduced-fat sour cream
1/2 cup 1 percent milk
1 tablespoon Dijon mustard

Directions
Heat oven to 400° F. Cook the pasta according to the package directions, adding the cauliflower during the last 3 minutes of cooking time; drain.
Meanwhile, pulse the bread in a food processor until coarse crumbs form. Add the parsley, 2 tablespoons of the oil, and ¼ teaspoon each salt and pepper; pulse to combine.
Return the pasta pot to medium heat and add the remaining tablespoon of oil. Add the onion, ¾ teaspoon salt, and ½ teaspoon pepper and cook, stirring occasionally, until soft, 3 to 5 minutes.
Mix in the pasta and cauliflower and the cheese, sour cream, milk, and mustard.
Transfer to a shallow 3-quart baking dish, sprinkle with the bread crumbs, and bake until golden brown, 12 to 15 minutes.

Zucchini Oven Chips

Ingredients
1/4 cup dry breadcrumbs
1/4 cup (1 ounce) grated fresh Parmesan cheese
1/4 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon freshly ground black pepper
2 tablespoons fat-free milk $
2 1/2 cups (1/4-inch-thick) slices zucchini (about 2 small)
Cooking spray

Directions
Preheat oven to 425°.  Combine first 5 ingredients in a medium bowl, stirring with a whisk. Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in breadcrumb mixture. Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet. Bake at 425° for 30 minutes or until browned and crisp. Serve immediately.

 Vegetarian Stuffed Peppers Recipe

Ingredients
6 large sweet peppers
2 cups cooked brown rice
3 small tomatoes, chopped
1 cup frozen corn, thawed
1 small sweet onion, chopped
1/3 cup canned red beans, rinsed and drained
1/3 cup canned black beans, rinsed and drained
3/4 cup cubed Monterey Jack cheese
1 can (4-1/4 ounces) chopped ripe olives
4 fresh basil leaves, thinly sliced
3 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
3/4 cup meatless spaghetti sauce
1/2 cup water
4 tablespoons grated Parmesan cheese, divided

Directions
Cut tops off peppers and remove seeds; set aside. In a large bowl, combine the rice, tomatoes, corn, onion and beans. Stir in the Monterey Jack cheese, olives, basil, garlic, salt and pepper. Spoon into peppers.Combine spaghetti sauce and water; pour half into an oval 5-qt. slow cooker. Add the stuffed peppers. Top with remaining sauce. Sprinkle with 2 tablespoons Parmesan cheese. Cover and cook on low for 3-1/2 to 4 hours or until peppers are tender and filling is heated through. Sprinkle with remaining Parmesan cheese.

Full time Dad, Part Time Super Hero

When we were young, we were pretty sure that our dads could fly.

Dad had reached that lofty status typically reserved for Super Heroes or Greek Gods. In our eyes, Dad was the strongest, fastest, and funniest person on the block. He was the guy calling out plays on the sidelines of our games, keeping us laughing on family road trips and the one that could fix anything with nothing but duct tape and paperclips.

He steadied our back tire as we dreamed of Evel Knievel, assured us that our guitar chords really did sound like music and managed to keep Mom on a need-to-know basis at all the right times.

On this Fathers Day we’d like to propose a toast to all of the full time Dads, part time Super Heroes in our lives.

While we now know you don’t have X-ray vision and certainly shouldn’t wear colored tights, we still think you could beat Captain America in arm wrestling (seriously, no tights, it’s bad).

Summer (Music) Love

May 2012 – As far back as I can remember (maybe around the age of 7?) I have had a love affair with music.  Yes, like most girls of the 80s & 90s, there was an obsession with New Kids on the Block but beyond that and unlike most girls at that age, I fell hard for the Grateful Dead.  There was just something about Jerry’s voice.  My uncle gave me my first album, What a Long Strange Trip it’s Been, and my dad put more fuel on the fire with the introduction of Terrapin Station.  I think everyone who is impacted by music can recall that first album or concert that stands out vividly in their mind as the moment that changed their lives forever.  For me, it was being in the sunroom of our house in Baltimore dancing around to the first Grateful Dead album that my uncle gave me.  That one moment has led to a continuous quest for music that gives that same feeling I had dancing around the sunroom as a child.  That said, the announcement of summer concerts around the Wasatch and beyond has me excited to once again dance barefoot like a kid.  Here’s just a few of the exciting upcoming concert schedules around SLC:

From Our Closet to Yours: Staff Picks for Memorial Day

Summer is a few weeks away and Memorial Day kicks off those glorious months of sunshine. To help you get ready for the summer rush, a few of our Axl’s insiders selected their top Memorial Weekend picks. Whether you are headed to the beach, huddled around the campfire or taking in some rays poolside we hope you celebrate the holiday in style.

Lisa, Marketing: An escape to the sand and sun

I love the beach and an escape to the ocean sounds like the perfect way to celebrate Memorial Day. The T2Love Raw Tank Dress is lightweight and flows nicely. It’s great as a cover-up for the beach.  It comes in multiple colors so you can find one to match with any swimsuit. I like the Roxy Shirred Bandeau One Piece Swimsuit because it has a great classic Roxy print with hearts and logo.  The style is nice because you can tie it as a halter or in a bow in the front since the top has a bandeau fit. Every kid needs a great, durable and lightweight beach hat.  I like this Columbia Wavebreaker Bucket Hat for all of those reasons as well as the fact that this one is reversible.  It is a vibrant hibiscus purple print on one side and white on the opposite side.

Kyle, Operations: Time for some fresh mountain air

The smell of pine trees and a campfire get me excited for summer. I’ve already packed my tent in the car for the weekend. This the ultimate camping hoodie for those weekend camp trips with the family. I love the vintage look of the Volcom Sprocket Lined Hoodie. With it being a little insulated and lined with thin fleece on the inside, this baby will keep you nice and toasty.  The North Face has been making amazing outdoor products for many years. Taylar, Customer Service: The park or the pool, I choose both

Sometimes just hanging out in your own backyard is the perfect weekend. This Memorial Day you’ll find me laying in the sun poolside or on a blanket in the park. I’m a total animal lover, but allergic to everything that walks the planet. I over compensate for my  physical rejection of the animal kingdom through my taste in clothing. These totally off the wall, nature inspired pieces are great  for summer outings.  I especially love this fun Neff Duck Cap. The DC Full Zip Hoodies are pretty rad too. They add an extra style element that the classic hoodie lacks. I of course love this hoodie for the great animal face on the front. Okay, so I saw the preview of Jaws and couldn’t get in the water for a few weeks. Somehow the DC Lunch Meat Boardshorts have the opposite effect on me. I love them. Your kid will be the stand out at the pool even if he still hasn’t mastered the diving board.

Interview with an Industry Insider: Danny Geary-Volcom

For two decades Volcom has been leading the charge in the youth oriented board-sports culture. Living their motto, Youth Against the Establishment, Volcom continues to blend their passion for art, music, surfing, skating and snowboarding into distinctly unique clothing and gear. This energetic approach to life is visible in everything Volcom creates and continues to keep them at the front of the pack in youth apparel season after season.

AC:  How long have you been with Volcom and what do you like best about it?

DG:  I’ve been with Volcom for 12 years and can honestly say I’ve enjoyed all 12 years.  Volcom promotes an environment for passionate people that live the active sports lifestyle.  If there are waves, we surf.  If it snows, we go ride.  For our skaters, we have an indoor skatepark that was built for our team riders specifically, but any employee can go skate there anytime.  We spend a lot of lunches surfing or skating.  It’s just a part of who we are.

AC:  How long has Volcom made youth clothing?

DG:  We started our youth program over 10 years ago and we started our little youth within the last 6 years.

AC:  What makes Volcom different?

DG: There are certainly a lot of aspects that make Volcom different from a lot of other brands, but I think in the end, it is up the kids out there to decide what makes Volcom different.  I’m sure if you asked anyone, they’d likely each have a different answer.

AC:  Where does the design inspiration come from?

DG:  Depends on the product.  Sometimes the cool lines or color of a car will inspire us, or the technology on a plane will get our attention, or it could be an idea one of the athletes gives us.  We use our neighborhoods as our canvas.

AC:  What’s your favorite thing about selling kids clothing?

DG:  Kids are awesome.   They show the most stoke of anyone.   I think all of us at Volcom are just the biggest kids out there.  So, we understand how a kid feels when he gets a new little something from Volcom.  We are just as stoked.

AC:  Is there a Volcom girls youth line in the future?

DG:  You never know, but not at this point.  We did introduce youth girls into our snow outerwear division.

AC:  What are the three pieces in this seasons (spring /summer 12) collection that represent the line the best?

DG:  As always, some of our most exciting kids pieces are the Full Zip Hoodies.  We have a couple new ones coming out now!  Our boardshorts just continue to get better and better as well.  I think most kids are going to be really amped on the new boardshorts.

AC:  You guys have a stacked team roster, how involved are athletes in the design process?

DG:  It really just depends on the product and the athlete.  Some riders have a real concept in mind of exactly how they want their product to be.  Some riders are open to our suggestions of what might make a great product.  There are also plenty of team riders that are just into whatever we make.  We have quite a diverse team of riders from different sports.  In one way or another, they are all contributors to the way we design Volcom products.

AC:  What would an Volcom kid eat for lunch?

DG:  A classic PB&J.  Well, if they go to our PBRJ (Peanut Butter and Rail Jam) snowboard contests and enter, they eat ‘em for free.

AC:  What cartoon character should be on the Volcom team?

DG:  I would say the Tasmanian Devil from Looney Toons, or Animal from the Muppets (even though he is not a cartoon character).  Again, coming from some classics.  Those two were way ahead of their time.
